Instant Pot Spiced Apple Cider

Ingredients:

6 medium size apples, core removed, quartered
2 1/2 cups (or more) filtered water
Zest of orange
Juice of orange, strained
1/4 cup real maple syrup
1 inch chunk fresh ginger, sliced
2 cinnamon sticks
7 whole cloves

Directions:

Add apple pieces and 2 1/2 cups water to a high powered blender. Blend until fully combined and liquified. Pour apple juice through a fine mesh strainer into a large mixing bowl or pitcher. Repeat straining 3 times to remove all of the pulp.

Pour the strained apple juice into the stainless steel Instant Pot. Add the orange juice to the Instant Pot. If the liquid volume does not reach the 5 cup mark on the Instant Pot, add more water until it hits the 5 cup mark.

Add the orange zest, maple syrup, sliced ginger, cinnamon sticks and cloves. Press “Saute” and bring to a boil. When the apple cider starts to boil, turn the Instant Pot off by pressing “Keep Warm/Cancel”.

Put the Instant Pot lid on making sure the seal valve is closed. Press “Manual” then “-” until you reach 10 minutes. When the Instant Pot beeps, it’s done. Turn the Instant Pot off by pressing “Keep Warm/Cancel”. Let it naturally pressure release for about 15 minutes until the silver dial next to the steam value drops.

With an oven mitt open the steam value just in case any leftover steam needs to escape. Using an oven mitt, open the lid and VERY CAREFULLY ladle or pour the super hot spiced apple cider through a fine mesh strainer. Enjoy immediately in your favorite mug.
