Instant Pot Roasted Potatoes

Ingredients:

1 tablespoon olive oil
1 pound baby new potatoes
½ teaspoon kosher salt
¼ teaspoon black pepper 1
½ tablespoon minced garlic

Directions:

Turn Saute function on instant pot. Allow to heat up and add in 1 tablespoon oil.

Add in potatoes, salt and garlic and saute for 3-4 minutes, until golden brown crust is formed on potatoes. Remove potatoes from inner pot and place in oven safe baking dish.

Pour in 1 cup of water into the inner pot of a 6-quart pressure cooker or 1.5 cups into an 8-quart instant pot, and use a spatula to scrape up any browned bits on the bottom of pressure cooker.

Place trivet in pressure cooker and place the oven safe baking dish on trivet. Close pressure cooker and set timer to 8 minutes on high pressure.

Once cook time has elapsed, allow pressure to naturally release for at least 5 minutes.
