Instant Pot Bhapa Doi Steamed Yogurt Pudding
Ingredients:
14 ounces Sweetened Condensed Milk
14 ounces Greek Yogurt Cheese full fat
Butter for greasing ramekins
Optional:
1 teaspoon Natural Cocoa Powder
5 crushed Green Cardamon Pods for dusting
Directions:
Grease Ramekins well and set aside.
Add Sweetened Condensed Milk to a Glass Measuring Cup. Add Yogurt and Whisk. Taste and add more Yogurt, if mixture is overly sweet.
Use butter and grease five 6 ounce Ramekins. Fill each Ramekin evenly with the mixture.
Add 2 cups of water and a stainless steel trivet into Pressure Cooker cooking pot. Place Ramekins on top of trivet.
Place a silicone mat or foil over Ramekins, so that water does not get into the Ramekins.
Lock on Lid and close Pressure Valve. Cook at high pressure (most machines default to high pressure) for 20 minutes.
When Beep sounds, wait 15 minutes and then release the rest of the pressure.
Bhapa Doi can be enjoyed warm, or place in the refrigerator for a chilled and dense dessert. Turn out onto a plate, or serve right in the Ramekin.
