Instant Pot Mulled Wine
Ingredients:
2 cups apple juice
1 navel orange, sliced into half rounds
1 apple, thinly sliced
2 cinnamon sticks
½ lemon, sliced into half rounds
½ teaspoon black peppercorns
1 teaspoon whole cloves
2 star anise
½ teaspoon whole allspice
⅓ cup dark brown sugar
¾ cup brandy
1 750-ml bottle of full-bodied red wine (Merlot, Cabernet Sauvignon, Zinfandel, or Malbec all work well)
Directions:
Cut one inch of rind off the top and bottom ends of orange. Lodge cloves into orange rinds, then slice remaining fruit into half rounds.
Add apple juice, spices, clove-studded orange rinds, lemon, and half of apples and oranges into the Instant Pot and pressure cook for 1 minute.
Quick-release pressure from Instant Pot and wait until the red pin drops before removing lid.
Strain your apple cider and discard the fruit, allspice, and peppercorns.
Add the wine, brandy, ⅓ cup sugar, cinnamon sticks, clove-studded orange rinds, apple cider, and remainder of the fruit back into the Instant Pot and set on sautee mode low setting. Adjust sugar to taste.
Saute until mixture steams but not boils, about 3-5 minutes.
Once steaming, turn Instant Pot to the keep warm function and serve.
