Instant Pot Lemony Green Beans
Ingredients:
1 pound fresh green beans cleaned and cut
½ cup water
1 tablespoon organic extra-virgin olive oil
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
Kosher salt to taste
freshly cracked pepper to taste
Directions:
Wash the green beans thoroughly in cold water to remove any debris.
Trim both ends of green beans and inspect for any dark spots or soft spots
Rinse the green beans again before placing them in the instant pot with ½ cup of water.
Cook on low pressure for 1 minute. Note it takes 5-7 minutes for the pressure cooker to heat. The beans will be cooing during that time.
Once the timer goes off, vent the steam from the pressure cooker by moving the pressure release handle to release. Do not put your hands or face near the vent when releasing the hot steam. Open the pressure cooker lid once all steam has been released.
Remove the beans from the pressure cooker to a clean bowl and drain of all water. Combine with the remaining ingredients, using plenty of black pepper. top with the lemon zest.
